The grapes come from a small Pinot Meunier vineyard near Crouttes-sur-Marne, planted in 1963. It is one of the house\u2019s oldest and most prized plots, where the deep clay-limestone soil gives the wine a powerful structure and mineral depth.<br data-start=\"877\" data-end=\"880\" \/>The balanced weather of 2019 yielded grapes that were both ripe and exceptionally aromatic, while retaining good acidity and elegance.<br data-start=\"1031\" data-end=\"1034\" \/>Les Justices is dedicated to the idea of doing justice to the terroir \u2013 letting nature speak for itself, without manipulation or additives.<\/p><p class=\"cvGsUA direction-ltr align-justify para-style-body\"><span style=\"color: #1b1919; font-size: 22px;\">Winemaking:<\/span><\/p><p data-start=\"1082\" data-end=\"1463\">Composition: <strong data-start=\"1204\" data-end=\"1228\">100 % Pinot Meunier.<\/strong><br data-start=\"1228\" data-end=\"1231\" \/>The grapes are hand-picked from biodynamically farmed vines. Pressing takes place in a traditional Coquard press. On the palate the wine is rich yet taut \u2013 a juicy, fruity core is balanced by precise acidity and saline minerality. The texture is creamy and multi-layered, recalling the finest Meunier-based Champagnes of the Vall\u00e9e de la Marne.<br data-start=\"2074\" data-end=\"2077\" \/>The finish is long, dry and crystal-clear, with a light herbal and citrus nuance.<\/p><h3 class=\"cvGsUA direction-ltr align-justify para-style-body\"><span class=\"OYPEnA font-feature-liga-off font-feature-clig-off font-feature-calt-off text-decoration-none text-strikethrough-none\">Food pairing:<\/span><\/h3><p class=\"cvGsUA direction-ltr align-justify para-style-body\">Les Justices 2019 is an exceptionally versatile food wine.
