Domaine des Roches Neuves is one of the best-known names in Saumur, its wines built around biodynamic viticulture, low yields and very precise cellar work. Clos Romans is one of the domaine's top white wines: Chenin Blanc from clay-limestone soil, where 30 cm of clay-rich sand sits above a layer of Senonian limestone.
