The wine's story:

Les Passagers Haut de Val Barmont 2023 comes from a single west-facing plot in Ville-sur-Arce, where the soil is Portlandian limestone.

Compared with Fiole, there is more sun and a warmer microclimate here, giving the wine riper fruit, a rounder texture and a slightly broader profile.

Although the wine remains dry and mineral in style, there is more balance here between acidity and ripeness – this is Clandestin’s “broader” interpretation of Chardonnay.

This wine shows very clearly how much a plot's orientation influences the final result – same producer, same grape, same vinification, yet an entirely different character.

Winemaking:

  • Grape variety: 100% Chardonnay
  • Origin: Ville-sur-Arce (single parcel, west-facing)
  • Soil: Portlandian limestone
  • Fermentation: spontaneous, with native yeasts
  • Ageing: ~12 months in demi-muids
  • Bottle ageing: ~15 months
  • Dosage: 0 g/l (Brut Nature)
  • Philosophy: the expression of a single plot, without blending

Tasting notes:

  • Colour: pale gold
  • Nose: riper lemon, yellow apple, pear, a hint of brioche
  • Palate: dry, but rounder than Fiole
  • Structure: medium body, softer acidity, more texture
  • Finish: long, mineral, slightly creamy

More gastronomic and “open” than Fiole.

Food pairing:

  • grilled or roasted fish
  • scallops, beurre blanc
  • poultry (chicken, duck breast)
  • mushrooms, truffle dishes
  • lightly creamy sauces

Ageing potential:

  • Drink: 2025–2033
  • Develops into something broader and more complex
  • Ages particularly well in magnum

Champagne Clandestin is a modern, terroir-focused Champagne house in the Côte des Bar in the Aube. Winemaker Benoît Doussot buys grapes from small growers working organically or biodynamically, with whom he works closely. The name "Clandestin" – French for secret or unofficial – refers to these previously overlooked vineyards outside the famous Champagne centres, which offer exceptional character and freshness. All the wines are made without added yeast, filtration or sugar. Clandestin Champagnes are pure, mineral and deliberately honest – a true reflection of the soils and climate of the Côte des Bar.
