The wine's story:

Austral – Latin for “southern” – is Champagne Clandestin's second key cuvée. While Boréal expresses the cool, north-facing slopes, Austral 2022 comes solely south-facing vineyards, which receive more sun and give the wine body and ripeness.

2022 was a sunny, warm year in the Champagne region, giving Pinot Noir a strong structure alongside ripe fruit. At the same time, a pure style was preserved thanks to higher-lying vineyards and an early harvest. Clandestin treats Austral as a dialogue with terroir – the wine does not strive for embellished ripeness, but brings out the nature of the clay-limestone soil and the clear energy of the vintage.

Austral 2022 is not meant for quick consumption – it calls for air, the right glass and attention. A Champagne with „architectural” acidity, depth and natural power.

Winemaking:

  • 100% Pinot Noir

  • Sourced from growers using biodynamic or organic practices on the south-facing slopes of the Côte des Bars

  • Hand-harvested, pressed immediately in a Coquard press

  • Fermentation with wild yeast in 500L oak barrels

  • No malolactic fermentation

  • 12 months in barrel + 15 months in bottle on the lees

  • Dosage: 0 g/l – Brut Nature

  • Disgorged 2023

  • Minimal added sulphites

Tasting notes:

Nose:
Ripe red berries (strawberry, wild strawberry), blood orange peel, smoked plum, with hints of brioche and hazelnut. A lightly smoky mineral note. With air the Champagne becomes more layered – dried herbs and a chalky dustiness emerge.

Palate:
Deep and energetic. Dense in texture, round on the palate at first, then quickly tightening to reveal precise acidity. Ripe red fruit, a herbal edge, pink grapefruit and mineral stoniness. The pressure is horizontal – the wine broadens across the palate rather than sharpening.

Finish:
Long, dry and slightly smoky-saline. An elegant finish with notes of lemon oil, red apple and roasted nuts.

Food pairing:

Austral 2022 pairs with:
– with grilled langoustine or crayfish
– with smoked duck or poultry with mushrooms
– with oven-roasted dishes featuring orange zest, herbs or dark mushrooms
– with aged cheeses: Comté, Ossau-Iraty, Pecorino

The ideal Champagne for gastronomic pairings, where texture and acidity can frame the dish.

Ageing potential:

Drink: 2025–2030+
Austral 2022 is enjoyable now, but will grow more complex over 5–7+ years: expect layers of brioche, hazelnut and dried red berries.

Champagne Clandestin is a modern, terroir-focused Champagne house in the Côte des Bar in the Aube. Winemaker Benoît Doussot buys grapes from small growers working organically or biodynamically, with whom he works closely. The name "Clandestin" – French for secret or unofficial – refers to these previously overlooked vineyards outside the famous Champagne centres, which offer exceptional character and freshness. All the wines are made without added yeast, filtration or sugar. Clandestin Champagnes are pure, mineral and deliberately honest – a true reflection of the soils and climate of the Côte des Bar.
