The wine's story:

La Solució Rosa (“The Pink Solution” in translation) is not a typical rosé – it was created as a serious pink wine with ageing potential that brings out Montsant's character in a paler hue. Sara and René have long made the red “Dido” wine, but from the mid-2010s they began experimenting with rosé to express their terroir in a different key. The 2023 Dido La Solució Rosa is made by co-fermenting red and white grape varieties: mainly Garnatxa (Grenache) – including the red, white and grey variants – complemented in smaller proportions by Macabeu (a white variety), Carinyena (Carignan), Ull de Llebre (the local name for Tempranillo) and a little Syrah. All the varieties are picked and pressed together so that their qualities merge from the very start, giving the wine a pale pink, “onion skin” salmon colour. The vines are farmed organically, and as 2023 brought moderate temperatures in Montsant, the grapes achieved full flavour complexity and balanced acidity.

Winemaking:

Dido Rosé is made more like a quality white wine. After gentle whole-bunch pressing, the juice is fermented with natural yeasts in neutral, often very old oak barrels. Fermentation is very slow – for this wine it lasted about 6 months – developing multi-layered flavours. After fermenting to dryness, the rosé aged on its lees for about 14–16 months in large vessels: a 4000-litre oak foudre more than 50 years old and a 3000-litre clay amphora (tinaja). This extended time on the lees, rare for a rosé, gives the wine extra texture, saline depth and longevity. The wine is not filtered or heavily fined, to preserve its nuanced character. By the time of bottling (early spring 2025 for the 2023 vintage) the wine has already achieved good balance and oxidative stability – ready to age gracefully in bottle, much like a fine Champagne or white Burgundy. Sara Pérez has noted that this rosé “ages astonishingly well in bottle”, and even early vintages are still in superb form years later.

Tasting notes:

Dido La Solució Rosa 2023 is a pale salmon pink with copper glints – on a par with the world's finest gastronomic rosés. On the nose it is subtle and delicate, offering an intriguing mix of white peach and wild strawberries, delicate dried flowers and a characteristic flinty minerality. In the background there is a hint of gentle earthiness and Mediterranean herbs, reflecting the complexity of the terroir. On the palate it is dry, medium-bodied and textured, surprisingly layered. White fruit (pear, peach) and ripe citrus come first, followed by nuances of red berries such as wild strawberry – all woven together with fresh acidity. Long ageing on the lees gives a creamy, rounded mouthfeel and a light tannic grip (an almost phenolic structure), yet the wine stays lively thanks to its mineral backbone. Tasters note an “almost saline finish” – nuances of dried herbs and spices (cinnamon and vanilla from old oak) and a long, chalky mineral finish. Despite the richness of flavour, the wine remains bright and refreshing, with an alcohol content of only around 13.5% and superb balance.

Food pairing:

Dido Rosé is often described as a “gastronomic rosé” – it is made to accompany food. Its saline depth and crunchy structure make it very versatile at the table. In Catalonia it is often paired with tapas and rice dishes – a seafood paella or fideuà would be superb, for instance, as the wine’s body and mineral cut stand up well to saffron and garlic. Its acidity and fine tannins also allow it to partner grilled fish (such as tuna or salmon) and richer poultry dishes (such as herb-roasted chicken). Thanks to its salty, earthy nuance it can even hold its own against lighter game or pork – a rabbit stew or rosemary-scented Ibérico pork steaks, for example. At the same time, its delicate fruit and floral tones do not overwhelm subtler dishes, so Mediterranean salads, charcuterie or soft cheeses also sit well alongside this rosé. In short, this is a rosé that can accompany an entire meal, from starter to main course.

Ageing potential:

Unlike most rosés, La Solució Rosa is made to mature and evolve. The makers deliberately treat it like a fine white wine and release it later; the 2023, for example, is sold a year after harvest, with some bottle age already. Sound acidity, phenolic structure and oxidative ageing allow this rosé to develop easily for 3–5 years, and in good vintages even up to 8–10 years in bottle. Wine critics have confirmed its longevity: older vintages gain nutty complexity without losing freshness. Tim Atkin MW notes that in cooler years the wine is “austere, elegant and sharp” in its youth (almost like a white wine) and rewards patience. He rated the 2022 vintage as one of Montsant’s best rosés and predicted it would stay in superb drinking form until 2032. In short, the 2023 Dido Rosé can confidently be cellared for a couple of years – it may develop even more saline nuances and honeyed notes – although it is already wonderful now for those who prefer a lively, mineral style.

Venus La Universal is a boutique winery in Montsant founded in 1999 by Sara Pérez and René Barbier Jr. – descendants of two legendary Priorat wine families (Mas Martinet and Clos Mogador). They deliberately chose the quieter Montsant DO to make wines expressing both the region's terroir and their own vision of elegance and individuality. The name and philosophy are inspired by femininity and love – influenced by Botticelli's The Birth of Venus, Sara wanted to "interpret femininity in a wine bottle". The Venus wines pay tribute to beauty, intuition and complexity. The name "Universal" goes back to the small producers of the 1920s whom Sara and René wanted to honour. The winery follows organic principles: 4 ha of its own vineyards on granitic sauló soil and about 10 ha from partner growers farmed to Venus standards. All vines are dry-farmed. Winemaking uses natural yeasts, often co-fermenting different varieties, with minimal or no sulphur, and ageing in a range of vessels – concrete tanks, clay amphorae, large old oak casks and neutral barrels. Montsant's diverse soils allow very different wines: the flagship "Venus" comes from higher clay-limestone sites, while the lighter, more approachable "Dido" grows on the decomposed granite (sauló) around Falset, which gives the wines bright freshness. Critics have praised Venus La Universal for balance, elegance and fine texture, noting them as exceptionally fresh among warm-climate reds with moderate alcohol (some vintages only around 13%).
