The wine's story:

À Deux Pas means in French “two steps away”. The name refers to the proximity of the village of Avize to Le Mesnil-sur-Oger – two Grand Cru areas of the Côte des Blancs whose styles are similar yet distinct in character.

While Le Mesnil-sur-Oger is known for a more austere and very chalky Chardonnay, Wines from Avize often have slightly broader fruit and a rounder texture, while still retaining the mineral clarity of the Côte des Blancs.

Girard-Bonnet’s À Deux Pas focuses precisely on this Avize character. It is a wine that combines pure Chardonnay fruit, chalky minerality and a fine mousse, while offering slightly more depth and texture than Mesnil-style Champagnes.

Winemaking:

The grapes come from from Avize Grand Cru vineyards, where Chardonnay grows on the chalky soils of the Côte des Blancs. The grapes are hand-picked to preserve fruit quality and optimal ripeness.

Pressing is gentle and fermentation takes place in stainless steel tanks and neutral oak barrels. This combination preserves a pure fruit profile while adding a little more texture to the wine.

After the primary fermentation, the wine matures for a long time on the lees, which gives the Champagne complexity and a fine mousse before recorking.

Technical details

Origin: Avize Grand Cru
Composition: 2022 base wine + reserve wines
Vinification: Stainless steel + oak barrels
Dosage: 1 g/l (Extra Brut)
Alcohol: 12.5%

Tasting notes:

On the nose come lemon peel, ripe pear and white peach, complemented by white blossom and chalky minerality. Maturation on the lees gives the wine nuances of brioche, toasted almond and a hint of hazelnut.

On the palate, the wine is precise and mineral, but its Avize origins give the mid-palate a little more fruit and texture. Citrusy acidity keeps the wine fresh and balanced. The finish is long, dry and lightly saline, where notes of chalk and citrus linger.

Food pairing:

À Deux Pas pairs well with dishes where what matters is a balance between freshness and texture.

A good match, for example:

  • scallops or langoustine

  • steamed or grilled white fish

  • seafood salad or ceviche

  • creamier fish dishes, for example with beurre blanc sauce

Avize’s slightly broader fruit profile allows the wine to pair well with with slightly creamier sauces and more textured dishes, while the citrusy acidity keeps the dish and the wine in balance.

Ageing potential:

À Deux Pas develops well in bottle 8–12 years. Over time the aromas deepen and there emerge ripe apple, toasted nuts and brioche nuances, while the wine's mineral structure remains clearly perceptible.

Champagne Girard-Bonnet is a grower Champagne house in the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs. The domaine is run by Paul Girard, from a family that has grown grapes in the area for several generations. The house has small vineyards in several renowned Côte des Blancs villages – Le Mesnil-sur-Oger, Oger and Avize (Grand Cru) and Vertus (Premier Cru). These villages sit on chalky slopes where thin limestone soil gives Chardonnay the region's typical precise acidity, chalky minerality and straight structure. Girard-Bonnet's Champagnes are based mainly on Chardonnay. In the vineyards the focus is on small parcels, low yields and the balance between ripeness and acidity. Several plots have been in the family for decades and give small but concentrated crops. In the cellar the approach is technically precise and rather restrained. Fermentation uses natural yeasts, in stainless steel or neutral oak depending on the cuvée. Whether malolactic fermentation is used depends on the vintage and the wine – the aim is to keep the tense acidity and clarity of Côte des Blancs Chardonnay. The wines age for a long time on the lees, adding texture and depth. The range is built on the expressions of villages and single vineyards – from the fresher, more approachable style of Vertus Premier Cru to the chalky precision of Le Mesnil-sur-Oger, the elegance of Avize and the slightly broader, riper tones of Oger. The result is Champagnes that emphasise origin, structure and minerality – a clear and detailed expression of Côte des Blancs Chardonnay.
