Manzanilla Pasada Balbaína Alta is a rare, very old and exceptionally layered manzanilla pasada, in which age brings creaminess but not heaviness.

The wine's story:

This wine was born from a small lot with a now-vanished source and is regarded as essentially a one-off bottling. Willy Pérez and Ramiro Ibáñez selected the casks with the most “pasada” character to show another side of manzanilla ageing: not just more nuttiness and oxidation, but also a more velvety texture, greater depth and a still-lively salinity. The result is a wine that goes well beyond young manzanilla, yet is not yet amontillado. It is an in-between, very subtle zone rarely encountered in such pure form.

Winemaking:

100% Palomino. This is a very old manzanilla, with an estimated age of around 15–18 years. The wine was selected from a handful of casks whose character was sufficiently “pasada” – i.e. more developed, deeper and more velvety, but not yet fully oxidative. Production was tiny and the wine is not planned to be made again in the same form, which gives it, besides its quality, clear historical value.

Tasting notes:

On the nose, dried hay, nuts, the finesse of old wood, chamomile, sea salt and a slightly bitter herbal note. On the palate creamy, soft, deep and long, yet very elegant. Age gives a velvety texture, while a serious saline and umami axis remains. The finish is long, dry and subtly bitter.

Food pairing:

Pairs with consommé, ibérico ham, mushroom dishes, roast poultry, aged cheeses and umami-rich small plates. Also very good as a wine around which a whole small-plates menu can be built.

Ageing potential:

Best within 8–15 years. A very stable wine that can keep for a long time in bottle and evolve slowly.

Ratings & accolades:

Earlier bottling (saca June 2024): Wine Advocate 97+/100.

Bodegas De La Riva is a joint project of Willy Pérez and Ramiro Ibáñez, aimed at restoring the meaning of Jerez's older wines, historic vineyard sites and small-batch wines. While Luis Pérez and Ramiro each make terroir-driven wines under their own names, De La Riva lets their two approaches meet even more freely: old soleras, single casks, historical references and very carefully chosen pagos. The wines are made in small quantities, often outside the usual mass-produced sherry logic, and emphasise place, ageing and the old flavour ideals of Jerez. De La Riva wines are mostly serious, layered and highly individual.
