The wine's story:

Les Protelles is the Piollot family’s rosé, born of terroir in its most honest form: without the saignée method, without colouring or correction, but a proper maceration method. The Pinot Noir grapes remain in contact with their skins for 96 hours — a long but controlled period that gives the wine its deep red hue, rich berry tannins and a very clear structure.

The vineyard is located on a south-facing slope in the village of Polisot and are 40 years old. Vines of this age ensure lower yields, concentrated berries and a ripe flavour profile.
The soil is Kimmeridgian limestone, which gives the wine a “stony” core and a saline finish.

Les Protelles is a rosé that has not been smoothed out by sugar or technique — it is genuine, deep and the ideal choice for those who want real character and real Pinot Noir in a rosé.

This is a true rosé de macération — not elegant but serious; not delicate but powerful; not a pink fizz but a gastronomic wine.

Tasting notes:

On the nose: ripe strawberry, red cherry, raspberry, pomegranate, rose, hibiscus and a light note of wild mushroom or earth, stemming from the long skin contact.
Palate: juicy, robust and with zesty acidity. Red berries blend with a light tannin that creates a structure rare in a rosé. The texture is silky, yet powerfully supported by minerality and gentle spice.
Finish: long, dry, with a saline, stony tone and a delicate herbal edge.

Les Protelles is a rosé not meant as “terrace fizz” — it is a wine that stands up to food.

Food pairing:

• grilled salmon, tuna, prawn skewers
• tartare (both beef and tuna)
• roasted root vegetables (beetroot, parsnip, celeriac)
• duck, quail, smoked trout
• pasta with truffle and wild mushrooms
• softer, aromatic cheeses (Tomme, Saint-Nectaire, bloomy-rind cheeses)

This rosé also handles spicier, more umami-rich flavours than most Champagne rosés — precisely because of its tannin and structure.

Ageing potential:

2024–2030+
Over time, nuances of dried strawberry, rose, herbs and wild mushroom emerge. The texture becomes even rounder and more aromatic.

Champagne Piollot is a five-generation family domaine in the village of Polisot in the Côte des Bar, run today by Roland Piollot and his daughter Jeanne. The Piollot family has grown grapes here for more than a hundred years, and their vineyards still hold rare old massal-selection vines. All 8.5 hectares of the domaine are certified organic and biodynamic. The vineyards are worked without chemicals, using their own compost, soil cultivation and natural plant preparations. The soil is Kimmeridgian limestone and clay, giving the wines clear minerality and fresh acidity. Piollot focuses on single-parcel wines and a zero-dosage style. Most wines express one grape and one plot. The range includes Côme des Tallants (Pinot Noir), Colas Robin (100% Pinot Blanc – one of the rarest cuvées in Champagne), Champs Rayés (Chardonnay), Mépetit (Pinot Meunier) and the rosé cuvée Les Protelles (a maceration rosé). Fermentations always use natural yeasts. The wines age for a long time on the lees, usually 4–6 years, which gives depth and fine texture. The result is dry, pure Champagne with a clear sense of terroir, marked by the ripe fruit, fresh acidity and salty minerality typical of the Côte des Bar. Piollot wines are valued for their honest style, balance and clear identity, and suit both professional wine lists and collectors' cellars.
