The wine's story:

Terroir Històric is Dominik Huber's project focused on reviving the historical Priorat wine style. Històric Blanc 2023 brings together grapes from 9 different villages, offering, through authentic flavours, an insight into the past and potential of Priorat's white wines. It is a blend of two local grapes – Garnatxa Blanca and Macabeu – fermented and aged in cement tanks, with no oak influence. The aim of the wine is to present pure and honest flavours as they might have been decades ago, but in a contemporary, clear and precise style.

Winemaking:

  • Grapes: 75% Garnatxa Blanca, 25% Macabeu
  • Origin: 9 villages, incl. Bellmunt, Gratallops, El Lloar, Escaladei
  • Soil: A mix of slate, clay, granite and alluvial soils
  • Fermentation: Native yeast, in cement tanks, 24h pre-maceration
  • Ageing: 6 months in cement, without oak
  • Alcohol: 13%
  • Bottling: Spring 2024
  • Production: A few thousand cases, more widely available than Terroir al Límit's core wines
  •

Tasting notes:

Colour: Pale yellow with a greenish tinge.

Aroma: Citrus notes (orange peel, lemon), yellow apples, pear and Mediterranean herbs (thyme, oregano). A mineral nuance and a light floral touch in the background.

Palate: medium-bodied, zesty and fresh. White peaches, almond blossom and a light salinity come to the fore. Well structured, thanks to skin contact also a delicate phenolic texture, but the absence of oak emphasises fruit and minerality. The finish is long and slightly bitter, reminiscent of grapefruit peel and Mediterranean herbs.

Food pairing:

  • Ideal with seafood: fried calamari, anchovies, grilled white fish with lemon
  • Pairs with salads and lighter dishes: Niçoise salad, salt cod with tomato (Esqueixada)
  • Classic pairing: Pa amb tomàquet (bread rubbed with tomato) and Jamón Ibérico
  • A good choice alongside seafood paella and aioli
  • Also excellent with vegetable dishes such as pesto pasta, grilled peppers and courgette
  • Goes well with young cheeses such as fresh goat's cheese or young Manchego

Ageing potential:

  • Made to be enjoyed young. Best 2024–2026, although the Macabeo may keep its freshness a little longer. It gains nothing from extended ageing – its charm lies in youth and purity.

Terroir al Límit is a Priorat winery that has changed the region's wine philosophy over the past two decades. Founded in 2001 by Dominik Huber and Eben Sadie, it grew from a wish to make elegant, transparent wines that reflect their terroir, in contrast to the traditionally powerful, oak-heavy wines of Priorat. When Eben Sadie returned to South Africa, Huber took over and expanded the winery with biodynamic vineyards. His winemaking is known for minimal intervention, using whole-cluster fermentation, natural yeasts and neutral vessels such as concrete tanks and large Stockinger foudres. Huber's range follows the Burgundian hierarchy: village and regional wines such as Terra de Cuques and Torroja, "Premier Cru" single-vineyard wines such as Dits del Terra and Arbossar, and "Grand Cru" wines such as Les Manyes and Les Tosses. He also created the Terroir Històric series, focused on Priorat's historical wine styles. Terroir al Límit has helped shape the new face of Priorat, highlighting elegance and a clear expression of terroir. Huber's work has inspired the "New Priorat" movement, which favours a lighter, more nuanced style.
