UBE Miraflores is a dry Palomino aged under flor that very clearly brings out the saline, taut and maritime-crisp character of Sanlúcar's Miraflores pago.

The wine's story:

Miraflores is one of Sanlúcar's most important historical pagos, and in Ramiro Ibáñez's hands it has become one of the central reference points of the whole UBE series. The wine comes from different plots in Miraflores Alta and Miraflores Baja, where old Palomino vineyards grow on west-facing albariza soils. The idea of this wine is not to imitate a classic manzanilla, but to show that the same landscape and the same grape can also give an unfortified wine with a very clear sense of origin. UBE Miraflores is one of the key wines in the wider movement that has helped to rethink Jerez not only through styles, but through sites.

Winemaking:

100% Palomino from old vines in the Miraflores pago. The wine is fermented with natural yeast in used barrels, without excessive technological intervention. It matures under flor for a shorter time than the more heavily aged classic wines of the region, to preserve the line, freshness and salinity characteristic of Miraflores. This is a dry, precise and relatively early-bottled wine whose centre of gravity lies not in oxidation but in a taut, straight and highly site-specific expression of Palomino.

Tasting notes:

On the nose, lemon zest, green almond, white flowers, subtle yeastiness and sea air. On the palate, dry, very linear and saline in focus, light to medium-bodied but with strong mineral tension. The finish lingers with chalky albariza, almond skin and a subtle bitter-citrus note.

Food pairing:

Pairs especially well with oysters, prawns, clams, grilled white fish and simple seafood dishes, where the wine’s salinity and dryness highlight the purity of the ingredients. Also very good with fried tapas, jamón and vegetables served with olive oil.

Ageing potential:

Best drunk within 3–6 years. Young, the wine is at its most energetic and marine, but if well stored it may become slightly more textured and nuttier.

Ramiro Ibáñez is one of the most important figures in today's Jerez, helping to bring the region's focus back to its vineyards, pagos and albariza soils. A winemaker from Sanlúcar de Barrameda, he combines historical knowledge with an inquisitive approach to show that Palomino can express its origin as clearly as the region's famous fortified wines. His wines come from old vineyards, with minimal intervention and often in used manzanilla casks, where flor is not just a technical detail but part of how the terroir speaks. The result is wines that emphasise salinity, texture, layers and a sense of place rather than power.
