UBE Paganilla is a Palomino from an inland pago, broader, more powerful and with a slightly earthier depth than Miraflores.

The wine's story:

Where Miraflores speaks above all of Sanlúcar’s maritime side, Paganilla helps you understand how quickly the expression changes just a few kilometres further inland. This wine matters to Ramiro Ibáñez precisely because it shows the diversity of Jerez terroir very concretely: the same variety, the same region and a similar approach, yet a completely different rhythm in the glass. Paganilla is neither as vertical nor as airy as Miraflores, but carries more breadth, riper fruit and earthy depth. This makes the wine an excellent point of comparison for anyone who wants to genuinely taste the differences between the pagos of Jerez, not just read about them.

Winemaking:

100% Palomino. Fermentation takes place with wild yeast in used casks, followed by short to moderate ageing under flor. The style is deliberately kept dry, restrained and free of excessive oxidative development, so that Paganilla's own character stays in the foreground. As with the other UBE wines, the aim is to express the site as directly as possible, rather than shaping every wine into a single regional style template.

Tasting notes:

On the nose, riper lemon, yellow apple, camomile, dried herbs and a light salty-almond note. The palate is dry, a little broader and more open than Miraflores, yet still very precise, mineral and well focused. The finish brings out riper fruit, a chalky texture and a fine nutty nuance from the flor.

Food pairing:

Pairs well with grilled fish, white meat, roast chicken, mushroom and vegetable dishes, as well as seafood with a slightly richer texture. Also a very good choice with more mature cheeses and simple rice dishes.

Ageing potential:

Best within 4–7 years. Over time the wine may become broader and more layered, while retaining its mineral axis.

Ramiro Ibáñez is one of the most important figures in today's Jerez, helping to bring the region's focus back to its vineyards, pagos and albariza soils. A winemaker from Sanlúcar de Barrameda, he combines historical knowledge with an inquisitive approach to show that Palomino can express its origin as clearly as the region's famous fortified wines. His wines come from old vineyards, with minimal intervention and often in used manzanilla casks, where flor is not just a technical detail but part of how the terroir speaks. The result is wines that emphasise salinity, texture, layers and a sense of place rather than power.
