The wine's story:

Colas Robin is one of Champagne Piollot’s most special and rarest cuvées — a wine based on a Pinot Blanc plot planted in 1996. This variety is extremely uncommon in Champagne, and Piollot is one of the few producers who not only grow Pinot Blanc but also make a standalone Champagne from it.

The plot lies in the village of Polisot in the Côte des Bar, an area where Kimmeridgian limestone creates ideal conditions for aromatic, mineral and structured white wine. The plot’s south-facing aspect provides enough sun for the Pinot Blanc to ripen, while organic and biodynamic farming ensures healthy grapes and an energetic purity.

Colas Robin is a tribute to the Piollot family's historical work — a wine that embodies their dedication to preserving old vines, traditional farming and rare varieties. This is not a technical Champagne but a very clear and individual expression of terroir and family heritage.

Winemaking:

Grape: 100% Pinot Blanc (planted 1996)
Soil: Kimmeridgian limestone
Site: south-facing slope
Ageing: organic and biodynamic

Vinification:
• destemming: no
• maceration: no (classic white pressing)
• fermentation in stainless steel tanks and oak barrels (combined)
• maturation steel tank + oak barrels (combined cooking)
• total ageing 5 years before release
• racking: yes
• not fined or filtered
• SO₂: yes (a very low technical amount)
• dosage: Brut Nature (0 g/l)

The role of the oak barrels is not to impart oakiness but gentle micro-oxygenation, which opens up the texture and aromatic layers of the Pinot Blanc.

Tasting notes:

On the nose: white peach, Williams pear, almond cream, apple peel, a mineral chalky tone and a delicate floral hint.
A light oak influence hints at honey and spiced almond without making the wine heavy or sweet.
On the palate the wine is textured, lightly creamy and elegantly balanced. Limestone minerality gives a saline, stony undertone; the fruit is pure and ripe.
The finish is long, dry and aromatically airy — the signature of Pinot Blanc.

This cuvée is one of the finest examples of how Champagne need not always be based on Pinot Noir and Chardonnay — Pinot Blanc brings an entirely different texture and experience.

Food pairing:

• white fish (trout, sea bass), scallops
• fresh shellfish and sushi
• goat’s cheese, Comté, Tomme de Savoie
• vegetable-based dishes: asparagus, artichoke, peas, fennel
• white meat with a light lemon or herb sauce
• superb with creamier seafood

The aromatic softness and mineral precision of Pinot Blanc make this Champagne one of Piollot’s most gastronomic cuvées.

Ageing potential:

2024–2032+
As it develops, nuances of dried fruit, toasted nuts, caramelised apple and brioche emerge, while the silky texture and saline limestone character are retained.

Champagne Piollot is a five-generation family domaine in the village of Polisot in the Côte des Bar, run today by Roland Piollot and his daughter Jeanne. The Piollot family has grown grapes here for more than a hundred years, and their vineyards still hold rare old massal-selection vines. All 8.5 hectares of the domaine are certified organic and biodynamic. The vineyards are worked without chemicals, using their own compost, soil cultivation and natural plant preparations. The soil is Kimmeridgian limestone and clay, giving the wines clear minerality and fresh acidity. Piollot focuses on single-parcel wines and a zero-dosage style. Most wines express one grape and one plot. The range includes Côme des Tallants (Pinot Noir), Colas Robin (100% Pinot Blanc – one of the rarest cuvées in Champagne), Champs Rayés (Chardonnay), Mépetit (Pinot Meunier) and the rosé cuvée Les Protelles (a maceration rosé). Fermentations always use natural yeasts. The wines age for a long time on the lees, usually 4–6 years, which gives depth and fine texture. The result is dry, pure Champagne with a clear sense of terroir, marked by the ripe fruit, fresh acidity and salty minerality typical of the Côte des Bar. Piollot wines are valued for their honest style, balance and clear identity, and suit both professional wine lists and collectors' cellars.
