The wine's story:

Côme des Tallants is one of the Piollot family’s most characteristic cuvées — a Champagne born of a Pinot Noir plot planted in 1988, expressing the geological richness of the Côte des Bar in a very direct form.

The vineyard is located on a south-facing slope, capturing the sun’s warmth and giving the Pinot Noir a ripeness that shows in the wine as deep fruitiness and generous texture. At the same time, the plot’s subsoil Marne clay and Kimmeridgian limestone, which gives the wine structure, mineral tension and long, stony lines.
This contrast — a warm exposure and stony soil — is the signature of Côme des Tallants.

The Piollot family farms the land organically and biodynamically, by hand and with minimal intervention. The result is a wine that is not technological but natural — a direct reflection of its terroir, without cosmetics or embellishment.

Winemaking:

Grape: 100% Pinot Noir
Vine age: planted in 1988
Soil: Marl (clay) + Kimmeridgian limestone
Site: south-facing slope (ripe fruit)
Ageing: organic & biodynamic

Vinification:
• destemming: no
• maceration: no
• fermentation stainless steel (steel tanks) – neutral, precise, with no wood influence
• maturation in stainless steel
• ageing time: 4 years on the lees
• racking: yes
• fining / filtration: no
• SO₂: yes (a small technical amount)
• dosage: Brut Nature (0 g/l)

This is one of Piollot’s most “clean-lined” cuvées — a Pinot Noir that opens up very purely, without oak and without sweetness.

Tasting notes:

On the nose: ripe cherry, strawberry yoghurt, redcurrant, lightly smoky limestone, pink peppercorn, gentle herbal notes.
In the background, citrus peel, a honeyed sweetness and a light honeyed creaminess blend together, the result of long ageing on the lees.

On the palate: the wine is powerful and straight-lined. Fruity at first (cherry, wild strawberry), then fresh citrus acidity and a long, saline minerality come to the fore.
The texture is silky and lightly creamy, yet at the same time very focused and energetic.
The finish is dry, long and warmly spiced.

Food pairing:

• duck breast, quail or veal with herb butter
• lightly smoked salmon or trout
• grilled or roasted root vegetables (parsnip, beetroot, celeriac)
• mushroom cream, risotto with truffle or wild mushrooms
• Comté, Gruyère and other mildly nutty cheeses
• also pairs beautifully with more robust nibbles (cured sausages, airy meat pâtés)

Côme des Tallants is a gastronomic Champagne, ideal at the centre of the dining table.

Ageing potential:

2024–2033+
Over time, layers of brioche, roasted nuts, dried cherry and deeper minerality emerge.

Champagne Piollot is a five-generation family domaine in the village of Polisot in the Côte des Bar, run today by Roland Piollot and his daughter Jeanne. The Piollot family has grown grapes here for more than a hundred years, and their vineyards still hold rare old massal-selection vines. All 8.5 hectares of the domaine are certified organic and biodynamic. The vineyards are worked without chemicals, using their own compost, soil cultivation and natural plant preparations. The soil is Kimmeridgian limestone and clay, giving the wines clear minerality and fresh acidity. Piollot focuses on single-parcel wines and a zero-dosage style. Most wines express one grape and one plot. The range includes Côme des Tallants (Pinot Noir), Colas Robin (100% Pinot Blanc – one of the rarest cuvées in Champagne), Champs Rayés (Chardonnay), Mépetit (Pinot Meunier) and the rosé cuvée Les Protelles (a maceration rosé). Fermentations always use natural yeasts. The wines age for a long time on the lees, usually 4–6 years, which gives depth and fine texture. The result is dry, pure Champagne with a clear sense of terroir, marked by the ripe fruit, fresh acidity and salty minerality typical of the Côte des Bar. Piollot wines are valued for their honest style, balance and clear identity, and suit both professional wine lists and collectors' cellars.
