The wine's story:

Cuvée de Réserve is the Piollot family’s most traditional Champagne — a cuvée in which Pinot Noir and Chardonnay complement each other harmoniously.
This is a wine that introduces the Piollot style to people trying the house for the first time, while offering detail-seekers enough depth to be memorable.

The vines in these plots are 25–45 years old, growing in the vineyards of the village of Polisot, where Kimmeridgian limestone gives the wine a vertical backbone and saline precision.
The south-east-facing aspect offers the perfect balance: the morning cool keeps the acidity fresh, while the midday sun adds ripeness and soft fruitiness.

Cuvée de Réserve is elegant, linear and silky — a Champagne suited both to a festive opening pop and to the dinner table. It is the Piollot family’s most “versatile” wine in both style and character.

Winemaking:

Grape: Pinot Noir & Chardonnay (the exact proportion varies from year to year)
Vine age: 25–45 years old
Soil: Kimmeridgian limestone
Site: south-east-facing slope
Ageing: organic & biodynamic

Vinification:
• destemming: no
• maceration: no
• fermentation in stainless steel tanks (steel tanks)
• maturation in stainless steel tanks
• ageing time: 2 years on the lees
• racking: yes
• fining / filtration: partial (NO / YES)
• SO₂: yes
• dosage: Brut

The steel tank gives the cuvée crystalline purity and a precise structure, emphasising the harmony of fruit and minerality without oxidative influence.

Tasting notes:

The nose reveals ripe green apple, pear, lemon zest, white flowers, a light brioche note and a saline, stony hint.
On the palate the wine is silky, fruity and freshly elegant: a soft hint of red berries from the Pinot Noir and a citrusy, creamy balance from the Chardonnay.
The finish is clean and dry, with a light almond note at the end — the ideal Brut style, where neither sweetness nor acidity dominates.

Cuvée de Réserve is a truly harmonious Champagne: not too technical, not too simple — exactly where it should be.

Food pairing:

• oysters, prawns and white fish with a touch of lemon
• sushi and sashimi
• fresh salad with goat’s cheese
• creamy pasta (with lemon, herbs or cream)
• grilled chicken or turkey
• softer cheeses (Brie, Camembert, Tomme)

Also ideal as a welcome drink or a celebratory opening fizz.

Ageing potential:

2024–2029
With cellaring, notes of brioche and toasted nuts emerge, and the mineral airiness of the Chardonnay stays nicely balanced with the softness of the Pinot Noir.

Champagne Piollot is a five-generation family domaine in the village of Polisot in the Côte des Bar, run today by Roland Piollot and his daughter Jeanne. The Piollot family has grown grapes here for more than a hundred years, and their vineyards still hold rare old massal-selection vines. All 8.5 hectares of the domaine are certified organic and biodynamic. The vineyards are worked without chemicals, using their own compost, soil cultivation and natural plant preparations. The soil is Kimmeridgian limestone and clay, giving the wines clear minerality and fresh acidity. Piollot focuses on single-parcel wines and a zero-dosage style. Most wines express one grape and one plot. The range includes Côme des Tallants (Pinot Noir), Colas Robin (100% Pinot Blanc – one of the rarest cuvées in Champagne), Champs Rayés (Chardonnay), Mépetit (Pinot Meunier) and the rosé cuvée Les Protelles (a maceration rosé). Fermentations always use natural yeasts. The wines age for a long time on the lees, usually 4–6 years, which gives depth and fine texture. The result is dry, pure Champagne with a clear sense of terroir, marked by the ripe fruit, fresh acidity and salty minerality typical of the Côte des Bar. Piollot wines are valued for their honest style, balance and clear identity, and suit both professional wine lists and collectors' cellars.
