The wine's story:
Mon Village means in French “my village”. This cuvée is Paul Girard’s tribute to Le Mesnil-sur-Oger, one of the most famous Chardonnay villages of the Côte des Blancs.
Le Mesnil-sur-Oger is renowned for Champagnes whose style is defined by very chalky soil, a high acid structure and a clear mineral character. These wines are often more austere and tense than, for example, Chardonnays from Avize or Oger.
Mon Village focuses precisely on this village identity. The grapes come from old vines, which give lower yields but more concentration and depth. The wine's structure is also supported by perpetual reserve system, in which each vintage’s wine is added to the reserve of previous years, creating a consistent style and greater complexity.
Winemaking:
The grapes come from from Le Mesnil-sur-Oger Grand Cru vineyards, where Chardonnay grows on deep chalk soils. The grapes are hand-picked to preserve their quality and freshness.
Pressing is gentle, and fermentation takes place both in stainless steel tanks as well as in oak barrels, which gives the wine both purity of fruit and texture.
An important part of this cuvée is perpetual reserve system, in which wines from previous years are kept and added to the blend of the new vintage. This helps give the wine greater depth and a consistent style.
After the primary fermentation, the wine matures for a long time on the lees, which adds complexity and a finer mousse before re-corking.

Tasting notes:
The nose is dominated by lemon zest, green apple and white grapefruit, complemented by chalky minerality, white blossom and a light saline nuance. Ageing on the lees brings out notes of brioche, toasted hazelnut and almond.
On the palate, the wine is very straight and mineral, where the acidity gives the wine a clear, energetic structure. Old vines and reserve wines add to the mid-palate more depth and texture, but the wine’s core character remains dry and precise. The finish is long, chalky and saline.
Food pairing:
Mon Village pairs especially well with dishes where what matters is purity and mineral balance.
A good match, for example:
oysters and clams
scallop or sea urchin
grilled or steamed white fish
sashimi or lightly marinated fish
The wine's mineral, taut structure also works well with with slightly richer, oilier fish, for example with salmon or tuna.
Ageing potential:
Thanks to the structure of Le Mesnil-sur-Oger and its high acid structure, Mon Village is a very good a Champagne with long ageing potential. The wine develops well in bottle 10–15 years, during which the aromas deepen and bring out ripe apples, toasted nuts and brioche nuances, while the mineral character remains clearly perceptible.
