The wine's story:

Les Passagers 2019 is a wine from Champagne Clandestin's single-plot series, focused on expressing a specific site as precisely as possible. The grapes come from the Ville-sur-Arce area in the Côte des Bar, where limestone soil and a cool climate give the wine a strong structure and a clear mineral line.

The 2019 vintage in Champagne was warm and ripe, allowing the grapes to achieve greater concentration and ripeness while retaining the acidity typical of the region.

The magnum format (1.5L) plays an important role here – the larger bottle allows the wine to develop more slowly and steadily, bringing out greater depth and balance. This is a wine not meant to be rushed, but one that opens up over time.

Winemaking:

  • Grape variety: 100% Chardonnay
  • Origin: Ville-sur-Arce, Côte des Bar (single plot)
  • Soil: limestone (Kimmeridgian / Portlandian layers depending on the plot)
  • Fermentation: spontaneous, with native yeasts
  • Ageing: ~12 months in 600L oak barrels (demi-muids)
  • Bottle ageing: extended, with the slower development typical of the magnum format
  • Dosage: 0 g/l (Brut Nature)
  • Sulphites: minimal

Tasting notes:

  • Colour: golden, with a light depth
  • Nose: ripe citrus, dried lemon peel, white blossom, a light nuttiness
  • Palate: dry and structured, balanced between ripeness and acidity
  • Structure: fuller than average, silky yet clearly mineral
  • Finish: long, slightly saline, with evolving complexity

The wine is already showing signs of development, yet retains clear freshness and tension.

Food pairing:

  • roasted or grilled white fish
  • scallops and seafood with butter sauce
  • poultry (chicken, turkey, duck)
  • mushrooms, truffle dishes
  • more mature soft cheeses

Also well suited to quiet enjoyment without food.

Ageing potential:

  • Drink: 2025–2038+
  • The magnum format allows very slow and steady development
  • Gains depth over time, adding nuttiness, dried fruit and texture

Champagne Clandestin is a modern, terroir-focused Champagne house in the Côte des Bar in the Aube. Winemaker Benoît Doussot buys grapes from small growers working organically or biodynamically, with whom he works closely. The name "Clandestin" – French for secret or unofficial – refers to these previously overlooked vineyards outside the famous Champagne centres, which offer exceptional character and freshness. All the wines are made without added yeast, filtration or sugar. Clandestin Champagnes are pure, mineral and deliberately honest – a true reflection of the soils and climate of the Côte des Bar.
