UBE El Reventón 2024

27,90 €

UBE El Reventón is a deeper, more serious pago wine, where inland albariza gives the Palomino more breadth, structure and earthy salinity.

The wine's story:

El Reventón comes from a site further inland, where the Atlantic influence does not disappear but changes: less direct maritime crispness, more dry relief, slope tension and the influence of the soil layer. This wine makes it very clear why Jerez is not a one-dimensional region. Whereas Miraflores can be bright and almost transparent in the glass, El Reventón speaks in a lower register: more depth, more texture and more quiet power. It is not a robust wine, but there is something more serious and architectural about it than the series' more coastal bottlings.

Winemaking:

100% Palomino. Fermented in used casks with natural yeast, followed by maturation under the influence of flor. The wine does not move strongly towards oxidative ageing, but deliberately remains dry, precise and focused on origin. Cellar work here is more a frame than the substance: all the important differences should come from the site, not the recipe.

Tasting notes:

On the nose, ripe apple, salted nuts, dried herbs, a hint of low tide and estuary, and calcareous minerality. Dry, textured and broader on the palate than Miraflores or Paganilla, but not heavy. The finish is long, saline and slightly nutty, with ripe fruit and earthy chalkiness in the background.

Food pairing:

Pairs well with grilled fish, seafood stews, roasted cauliflower, rabbit, chicken dishes and richer vegetable cuisine. Also a good companion to dishes with a little broth, browned butter or herbs.

Ageing potential:

Best within 5–8 years. Well cellared, it can develop to become nuttier, rounder and even more layered.

Ramiro Ibáñez is one of the most important figures in today's Jerez, helping to bring the region's focus back to its vineyards, pagos and albariza soils. A winemaker from Sanlúcar de Barrameda, he combines historical knowledge with an inquisitive approach to show that Palomino can express its origin as clearly as the region's famous fortified wines. His wines come from old vineyards, with minimal intervention and often in used manzanilla casks, where flor is not just a technical detail but part of how the terroir speaks. The result is wines that emphasise salinity, texture, layers and a sense of place rather than power.
