UBE Carrascal is an old-vineyard Palomino that brings together the sterner minerality of the Carrascal pago, Atlantic influence and a very clear structure.

The wine's story:

Carrascal is a historically very important name in the world of Jerez, and in Ramiro Ibáñez’s interpretation it becomes especially clear as a wine that offers not so much easy drinkability as form and tension. The wine comes from the very old Las Vegas vineyard, which gives a small yield with a strong identity. Where Miraflores can be bright and flowing, Carrascal is stricter, stonier and more focused. It is a wine that shows well that the great whites of Jerez need not be soft or simply salty – they can also be vertical, almost ascetic and very precisely contoured.

Winemaking:

ery old-vine Palomino from the historic Las Vegas vineyard. Fermentation takes place in used casks with wild yeast, followed by ageing under the influence of flor. Handling is minimal, the aim being to retain as much of Carrascal's own structure and mineral intensity as possible. The wine is built not around fruit, but around soil, salinity and the depth of old vines.

Tasting notes:

On the nose, lemon zest, dried herbs, white almond, salt, chalk and a very fine smoky minerality. The palate is very dry, taut and restrained, vertical rather than broad. The finish is long, saline and chalky, with a delicate nutty nuance in the background.

Food pairing:

Pairs with oysters, clams, raw seafood, white fish crudo, grilled octopus and vegetables dressed with olive oil. Also very good with minimalist dishes where the wine’s minerality can stay in the foreground.

Ageing potential:

Best within 5–8 years, but can develop for longer. Over time it may become more nuanced and nuttier, while retaining a strong mineral backbone.

Ramiro Ibáñez is one of the most important figures in today's Jerez, helping to bring the region's focus back to its vineyards, pagos and albariza soils. A winemaker from Sanlúcar de Barrameda, he combines historical knowledge with an inquisitive approach to show that Palomino can express its origin as clearly as the region's famous fortified wines. His wines come from old vineyards, with minimal intervention and often in used manzanilla casks, where flor is not just a technical detail but part of how the terroir speaks. The result is wines that emphasise salinity, texture, layers and a sense of place rather than power.
