El Muelle de Olaso is a fresh vino de pasto with a saline streak, showing how lively and gastronomic Palomino can be without fortification.

The wine's story:

This wine is part of Luis Pérez’s wider ambition to revive Jerez’s older world of table wines – a time when local white wine did not automatically go on to long cellar ageing but was also taken seriously as a drink in its own right. El Muelle de Olaso does not try to be a modern aromatic white or a “mini-fino”, but something in between: dry, maritime and very drinkable, yet still very much Jerez at heart. It is a wine that helps dispel the myth of Palomino’s neutrality, because in the right site and with precise handling it has more verve, minerality and inner tension than the variety’s reputation would suggest.

Winemaking:

The wine is made from the fruit of the El Corregidor vineyard and is based mainly on Palomino. Fermentation takes place with native yeast, after which the wine matures briefly under flor to add a light yeasty and saline dimension while preserving its youthfulness. Cellar handling here is deliberately short and direct: the aim is not to build depth through long ageing, but to keep the wine lively, clear and food-friendly.

Tasting notes:

On the nose, citrus, white peach, green herbs, a light hint of tropical fruit and chalky salinity. The palate is dry, bright and juicy, light to medium-bodied, yet not simple. On the finish, lemon peel, herbal notes and a fine saline, bitter tone from the flor linger.

Food pairing:

Pairs superbly with prawns, fried squid, ceviche, grilled white fish, vegetable tempura and other light summer dishes. A very good introduction for those who have not tasted unfortified Jerez whites before.

Ageing potential:

Best within 2–5 years. When young, the wine is at its brightest, most immediate and fruitiest.

Bodegas Luis Pérez is a family project in Jerez built on the idea that the region's future lies once again in the vineyards, not only in the blending and ageing traditions of the bodegas. Luis Pérez and his son Willy Pérez have been among the most important voices in reviving interest in historic pagos, the different forms of albariza soil and unfortified Jerez wines. Their work combines thoughtful viticulture, historical research and a very precise winemaking hand. The wines don't try to impress – they show how Macharnudo, Carrascal and other sites taste when treated as serious vineyards rather than just raw material for sherry.
