La Escribana is a vino de pasto from the Macharnudo pago in which the finesse of flor, a nuance of old cask and chalk-rich soil come together in an elegant key.

The wine's story:

La Escribana shows Macharnudo in a different form from the classic old finos or amontillados. Here the focus is less on category and more on origin. Willy Pérez has repeatedly stressed that the future of Jerez depends on whether the region learns once again to speak of its sites and not only of its cellar methods. La Escribana is a very good example of this way of thinking: a wine that is at once clearly Jerez and clearly Macharnudo. Its character has more breadth, dignity and inner calm than many younger vino de pasto wines.

Winemaking:

100% Palomino Fino. The grapes come from the Macharnudo vineyards, where the chalk-rich albariza gives the wine depth and carrying power. After fermentation the wine matures for about a year under flor in very old barrels. This longer biological ageing gives La Escribana more texture and a subtle nuttiness than vinos de pasto aged for a shorter time, yet the wine remains dry, taut and very food-friendly.

Tasting notes:

On the nose, riper lemon, yellow apple, chamomile, toast, almond and chalky minerality. On the palate, dry, finely textured and very well balanced. The influence of flor is clearly present but not dominant; it supports the wine's saline, calm and layered build. The finish is long, gently nutty and mineral.

Food pairing:

Pairs well with scallops, white fish, roast chicken, mushrooms, artichokes and more mature cheeses. Also a very good wine for classic sauce-based dishes, where an overly aromatic white might dominate.

Ageing potential:

Best within 4–8 years. Develops well in bottle and may become slightly broader and nuttier.

Bodegas Luis Pérez is a family project in Jerez built on the idea that the region's future lies once again in the vineyards, not only in the blending and ageing traditions of the bodegas. Luis Pérez and his son Willy Pérez have been among the most important voices in reviving interest in historic pagos, the different forms of albariza soil and unfortified Jerez wines. Their work combines thoughtful viticulture, historical research and a very precise winemaking hand. The wines don't try to impress – they show how Macharnudo, Carrascal and other sites taste when treated as serious vineyards rather than just raw material for sherry.
