The wine's story:

Chardonnay makes up only a tenth of Hammelmann’s vineyards, but in recent years it has become one of the house’s most important wines. The village-level Chardonnay from Zeiskam is made like a small Burgundy – spontaneous fermentation in barrel, time on the lees – while remaining light, fresh and energetic rather than buttery or heavy.

Lukas Hammelmann founded his small wine estate in Zeiskam, in the southern Pfalz, in 2016, coming from a family with no previous connection to winemaking. He farms just under five hectares in three villages – Zeiskam, Hochstadt and Neustadt-Hambach – and makes wine from only three varieties: Riesling, Chardonnay and Spätburgunder.

Winemaking:

  • Variety: Chardonnay 100%
  • Soil: sandstone, clay, loess
  • Hand-harvested, spontaneous fermentation in wooden casks
  • Around 9 months on the lees, bottled unfiltered
  • Alcohol 12%

Tasting notes:

Yellow apple, pear, lemon, a light nuttiness and creaminess from the lees. Dry and lively, with a fresh finish.

Food pairing:

Chicken, turkey, mushrooms, fish with butter sauce, pasta and soft cheeses.

Ageing potential:

Best 2026–2030.

Lukas Hammelmann didn't inherit a wine estate – he built one himself. His family has no connection to winegrowing, but the dream of becoming a winemaker stayed with him from childhood, and in 2016 he started with a single Riesling plot in his home village of Zeiskam in southern Pfalz. Today he farms just under five hectares in three places – Zeiskam, the neighbouring village of Hochstadt and the historic slopes of Neustadt-Hambach – and works with only three grapes: Riesling, Chardonnay and Spätburgunder (Pinot Noir). All grapes are picked by hand, ferment spontaneously in wooden barrels and are mostly bottled unfiltered. The vineyards are farmed organically but without certification – "I don't do it for marketing." Around 30,000 bottles are made each year, 80% of which is exported to ten countries. In 2023 VINUM Weinguide Deutschland named him its discovery of the year.
