The wine's story:
Les Bien Aimées (“the beloved”) is one of Bourgeois-Diaz’s most prestigious single-vineyard Champagnes. The grapes grow on the slopes of Crouttes-sur-Marne, in a small Pinot Noir plot planted in the 1960s, with deep clay and limestone soil.
2019 brought balanced ripeness to the region – a warm but not excessively hot summer ensured concentrated fruit and aromatic clarity. This vintage is a superb expression of the terroir’s mineral depth and the fruits of biodynamic work: vigorous vines, a pure fruit profile and harmonious ripeness.
Winemaking:
Composition: 100 % Pinot Noir.
The grapes are hand-picked and pressed in a traditional Coquard press. Fermentation takes place with natural yeasts in small, used oak barrels, where the wine remains on its lees for several months. Malolactic fermentation occurs naturally.
After bottling, the wine matures in bottle on its lees for over 60 months (5 years) before disgorgement.
Dosage: 0 g/l – Brut Nature.
Minimal added sulphites (< 25 mg/l).
Tasting notes:
On the nose, ripe black cherry, wild cherry, a smoky hint and lightly toasted almond. On the palate dense and silky, with red-berry freshness at first, followed by nuances of brioche and delicate spices (pepper, clove). The acidity is precise and carrying, the texture deep and mineral.
The finish is long and dry, saline, with a light herbal note adding complexity. It combines power and pure elegance – Pinot Noir in its most sincere expression.
Food pairing:
Les Bien Aimées 2019 is a serious gastronomic Champagne, ideal with:
– duck breast or quail dishes, especially when the dish includes black truffle or wild mushrooms;
– beef fillet tartare, veal chop, roasted beetroot or parsnip;
– seafood roasted lobster or sea bass with butter sauce;
– among cheeses aged Comté, Gruyère, truffle goat's cheese.
Thanks to its structure, this Champagne works alongside both white and red meat – a rare balance.
Ageing potential:
At its peak 2025–2035. Longer ageing brings out brioche, roasted nuts and dried fruit while retaining the freshness and structure of the Pinot Noir. Potential to develop gracefully for at least 10–12 years after disgorgement.
