The wine's story:
Les Justices is one of Bourgeois-Diaz’s most concentrated and distinctive single-vineyard cuvées. The grapes come from a small Pinot Meunier vineyard near Crouttes-sur-Marne, planted in 1963. It is one of the house’s oldest and most prized plots, where the deep clay-limestone soil gives the wine a powerful structure and mineral depth.
The balanced weather of 2019 yielded grapes that were both ripe and exceptionally aromatic, while retaining good acidity and elegance.
Les Justices is dedicated to the idea of doing justice to the terroir – letting nature speak for itself, without manipulation or additives.
Winemaking:
Composition: 100 % Pinot Meunier.
The grapes are hand-picked from biodynamically farmed vines. Pressing takes place in a traditional Coquard press. Fermentation begins with wild yeasts in small used oak barrels, where the wine remains on its lees for a few months.
Malolactic fermentation takes place naturally.
After bottling, the wine matures in bottle on its lees for over 60 months (5 years) before disgorgement.
Dosage: 0 g/l – Brut Nature.
Minimal sulphites (< 25 mg/l).
Tasting notes:
The nose reveals ripe peach, apricot, pear and a touch of honey, joined by notes of roasted hazelnut and fresh chalk. On the palate the wine is rich yet taut – a juicy, fruity core is balanced by precise acidity and saline minerality. The texture is creamy and multi-layered, recalling the finest Meunier-based Champagnes of the Vallée de la Marne.
The finish is long, dry and crystal-clear, with a light herbal and citrus nuance.
Food pairing:
Les Justices 2019 is an exceptionally versatile food wine. It pairs superbly with:
– truffle risotto or wild mushroom pasta dishes, where the wine’s creamy texture supports the umami richness of the food;
– roast veal chop or chicken confit alongside, where the saline minerality balances the richness;
– white fish in butter sauce, shellfish, especially roasted lobster or clams in white wine sauce;
– as well as more mature soft cheeses such as Comté, Beaufort or Tête de Moine.
Ageing potential:
Best enjoyed 2025–2035. Thanks to Meunier’s natural structure and long ageing on the lees, the wine can develop for at least 10–12 years, gaining notes of dried fruit, brioche and almond over time while retaining lively acidity and freshness.
