The wine's story:
Boréal (Latin for „north wind”) is one of Champagne Clandestin’s flagships – a cuvée made solely from north-facing slopes Pinot Noir grapes harvested around Buxières-sur-Arce. These cool vineyards ripen more slowly, retaining the exceptional acidity and saline minerality that define the Boréal style.
The 2022 vintage was ripe and harmonious, while still allowing elegance and depth to be achieved without any loss of ripeness. The wine sharply expresses the energy of the Côte des Bar's Kimmeridgian clay-limestone soils, offering Burgundian clarity and texture.
Boréal 2022 is not made for first impressions – this Champagne demands air, attention and patience. An ideal choice for those who appreciate raw terroir and layered flavours.

Tasting notes:
Nose:
Chalky minerality, redcurrant and ripe lemon peel. A fine hint of brioche, dry pastry dough, toasted hazelnut. In the background, elegant red apple and a lightly smoky salty crust.
Palate:
Concentrated and vertical. A strong, citrusy attack of acidity, followed by mineral depth. Lemon oil, white grapefruit, green pear, a saline crust. The texture is taut, even “gripping”, yet creamy and long. The wine evolves in the glass over time, developing further layers of brioche, dried herbs and ripe fruit.
Finish:
Long, dry and very saline – a true Côte des Bar signature. The saline pressure and acidity leave a smooth, slightly umami impression on the palate.
Food pairing:
Pairs superbly with:
– with oysters, shellfish and white fish served with citrus butter
– with sushi or sashimi
– with salty aged cheeses (Comté, Gruyère)
– with dishes featuring preserved lemon, celery or white truffle
A powerful Champagne that calls for dishes with precise texture. Ideal as an aperitif for wine connoisseurs or for a terroir-driven Champagne pairing.
Ageing potential:
Best drinking window: 2025–2029
With 5–7 years of cellaring, it gains further brioche depth, dried fruit and nutty nuances. Yet thanks to its zero dosage, the wine is already very lively and balanced in its youth.
