The wine's story:

La Hunaudière is one of Fabien Duveau's lieu-dit Chenin Blancs from the village of Saint-Cyr-en-Bourg. This wine shows the more energetic, direct side of Saumur Chenin: not heavy, not sweet, but taut, dry, citrusy and mineral.

According to Duveau’s notes, the wine comes from four parcels within the same lieu-dit, dominated by flint and chalk. In the producer’s own description, the wine has clear energy, a mineral grip and floral, fresh citrus aromatics.

Winemaking:

  • Grape: 100% Chenin Blanc
  • Appellation: AOC Saumur Blanc
  • Village: Saint-Cyr-en-Bourg
  • Soil: mainly flint and chalk; the producer’s website also describes it as chalky sand transitioning over tuffeau or greenish chalk
  • Farming: organic; Demeter-certified domaine since late 2023
  • Fermentation: native yeasts
  • Vinification: partly in cement tanks, partly in old oak barrels
  • Ageing: around 6 months in concrete and barrel
  • Serving: about 10 °C

Tasting notes:

Yellow apple, mandarin, peach, white blossom and fresh citrus. On the palate the wine is dry, aromatic and supple, but at the finish it is held together by Chenin Blanc's characteristic acidity and Saumur's mineral backbone. This is a wine of energy and precision rather than weight.

Food pairing:

  • Baked fish, white fish with beurre blanc sauce
  • Goat’s cheese and fresh herbs
  • Chicken with lemon, thyme and butter
  • Asparagus, courgette, a spring vegetable platter
  • Lightly smoked trout or whitefish

Ageing potential:

As a young vintage, the 2025 is suitable for early drinking, but Chenin Blanc and Saumur’s mineral structure give the wine 4–7 years of potential.

Fabien Duveau is an eighth-generation winemaker in Saumur-Champigny who took over the domaine from his father in 2008. His work is based on the two main grapes of Saumur: Chenin Blanc and Cabernet Franc. Duveau's wines are tied to specific lieux-dits – precise sites around Chacé, Varrains, Saint-Cyr-en-Bourg and Brézé. Fabien has converted the domaine to organic farming, and it has held Demeter biodynamic certification since late 2023. His work centres on living soils, natural yeasts, tuffeau, clay-limestone, sand and flint-chalk, and a wish to let each site speak its own language. In style, Fabien Duveau's wines are energetic, precise and made for food. The white Chenins are not just fresh but carry texture, depth and mineral tension. The Cabernet Francs are fresh, juicy and peppery, leaning towards transparency rather than weight.
