The wine's story:

Les Tosses is Terroir al Límit’s top wine, representing the highest possible expression of Carignan in Priorat. It comes from vines over 90 years old growing on a steep llicorella slate slope at 650 m above Torroja.

If Les Manyes is a Burgundian-style elegant Grenache, Les Tosses is a more powerful, muscular yet surprisingly refined Carignan, which has even been compared with the finest wines of Côte-Rôtie and Hermitage. Les Tosses received 100 Parker points in 2016, securing its position as one of the world’s greatest Carignan-based wines.

The 2022 vintage was warm, but Huber picked early, preserving an exceptional balance between ripeness and acidity. It is a structured, mineral and powerful yet surprisingly refined wine with a lifespan of several decades.

Winemaking:

  • Grapes: 100% Carignan (Carinyena)
  • Vine age: ~90 years
  • Soil: Pure llicorella slate, steep slope
  • Fermentation: whole-cluster, natural yeasts, minimal extraction
  • Ageing: 18 months in large foudres (Stockinger)
  • Alcohol: ~13.5–14%
  • Production: ~1,200 bottles

Tasting notes:

Colour: Deep ruby red with an almost opaque core

Nose: Closed at first, but as it opens, black fruit (blackcurrant, blackberry), graphite, black pepper and bay leaf emerge. With time, violets, Mediterranean herbs and mineral, saline hints of slate join in.

Palate: Powerful and vertical, yet with extremely fine tannins. Dark berries and plum come through first, then a mineral depth emerges. The tannins are dry and very precise, while the acidity keeps the wine alive. The finish is long, stony and saline, with a slight herbal bitterness.

Food pairing:

Les Tosses calls for intense, flavourful dishes that support its depth and structure:

  • Game and red meat: grilled beef entrecôte, rack of lamb with dried herbs, wild boar in red wine sauce
  • Rich sauces and stews: oxtail stew, venison with thyme
  • Earthy dishes: Truffle risotto, lentils with smoked meat
  • Cheeses: Aged Comté, Manchego aged 18+ months, mature Cheddar

Ageing potential:

  • Optimal drinking window: 2025–2045
  • Its structure and acidity give it 20+ years of ageing potential
  • With age, nuances of truffle, balsamic and leather emerge
  • Best after 2027, once the tannins soften

Terroir al Límit is a Priorat winery that has changed the region's wine philosophy over the past two decades. Founded in 2001 by Dominik Huber and Eben Sadie, it grew from a wish to make elegant, transparent wines that reflect their terroir, in contrast to the traditionally powerful, oak-heavy wines of Priorat. When Eben Sadie returned to South Africa, Huber took over and expanded the winery with biodynamic vineyards. His winemaking is known for minimal intervention, using whole-cluster fermentation, natural yeasts and neutral vessels such as concrete tanks and large Stockinger foudres. Huber's range follows the Burgundian hierarchy: village and regional wines such as Terra de Cuques and Torroja, "Premier Cru" single-vineyard wines such as Dits del Terra and Arbossar, and "Grand Cru" wines such as Les Manyes and Les Tosses. He also created the Terroir Històric series, focused on Priorat's historical wine styles. Terroir al Límit has helped shape the new face of Priorat, highlighting elegance and a clear expression of terroir. Huber's work has inspired the "New Priorat" movement, which favours a lighter, more nuanced style.
