The wine's story:

Pedra de Guix is Terroir al Límit’s flagship among its white wines – a rare Vi de Coster (single-slope wine) in Priorat. It combines grapes from three different soils and villages, showcasing the diversity of the region’s white terroir. Pedro Ximénez (clay soil – Lloar), Garnacha Blanca (slate – Poboleda), Macabeo (alluvial gravel – Torroja).

The wine is made with light skin contact and controlled oxidation, giving it a depth and texture partly reminiscent of fino sherry or old white Rioja. The 2022 vintage continues the trend of earlier outstanding years – ripe, yet precise and elegant.

Winemaking:

  • Vines: 50–80 years old, at 400–600m altitude
  • Fermentation: Separately, in used 500L French oak barrels
  • Ageing: ~12 months in oak barrels, then a further 12 months in large foudres (~24 months in total)
  • Unfiltered, with a light oxidative approach
  • Alcohol: 13.5%
  • Production: 3,800 bottles

Tasting notes:

Colour: straw yellow with a light golden hue

Aroma: Ripe yellow plum, baked apple, dried apricot, with wild herb and nutty notes. The llicorella slate adds a mineral and saline character.

Palate: Dry and layered – rich at first, with ripe citrus and pear, then a mineral, fresh finish revealing an elegant saline-bitter line. A light oxidative touch adds nuances of almond and wax.

Food pairing:

  • Rich seafood (lobster in bisque sauce, seared scallops)
  • Mushroom dishes and creamy pastas (truffle risotto, wild mushroom ragù)
  • Salt-crusted baked fish, roast poultry
  • Mature cheeses (Comté, Manchego, Valdeón blue)
  • Exotic combinations (Thai coconut curry, chicken with lemon and olives)

Ageing potential:

  • Drinking window: 2024–2035
  • Best in 2026–2030, when youthful fruit and complex oxidative character come into balance
  • Develops in an Amontillado-like direction, gaining spice and nutty tones

Terroir al Límit is a Priorat winery that has changed the region's wine philosophy over the past two decades. Founded in 2001 by Dominik Huber and Eben Sadie, it grew from a wish to make elegant, transparent wines that reflect their terroir, in contrast to the traditionally powerful, oak-heavy wines of Priorat. When Eben Sadie returned to South Africa, Huber took over and expanded the winery with biodynamic vineyards. His winemaking is known for minimal intervention, using whole-cluster fermentation, natural yeasts and neutral vessels such as concrete tanks and large Stockinger foudres. Huber's range follows the Burgundian hierarchy: village and regional wines such as Terra de Cuques and Torroja, "Premier Cru" single-vineyard wines such as Dits del Terra and Arbossar, and "Grand Cru" wines such as Les Manyes and Les Tosses. He also created the Terroir Històric series, focused on Priorat's historical wine styles. Terroir al Límit has helped shape the new face of Priorat, highlighting elegance and a clear expression of terroir. Huber's work has inspired the "New Priorat" movement, which favours a lighter, more nuanced style.
