The wine's story:

Terroir Històric Negre 2022 is a simple yet flavourful tribute to the peasant wines of 1970s Priorat. With this wine, Dominik Huber seeks to revive an era when the region’s wines were made as naturally as possible – without oak barrels and with minimal intervention. The wine is predominantly a blend of Garnatxa (75%) and Cariñena (25%) from various Priorat villages. A short fermentation and ageing in cement create a fresh, juicy wine, suited both to everyday enjoyment and as a good introduction to the wines of Priorat. The warm 2022 vintage brings out Grenache’s ripe fruit notes and soft tannins, making the wine immediately enjoyable.

Winemaking:

  • Grapes: ~75% Garnatxa, 25% Cariñena
  • Origin: 9 villages across Priorat, different soil types (slate, clay, granite, alluvium)
  • Fermentation: Whole bunches, native yeast, short maceration (7–10 days)
  • Ageing: 6 months in cement tanks (no oak)
  • Alcohol: ~14%
  • Bottling: Spring 2023
  • Filtration: Light filtration to preserve naturalness

Tasting notes:

Colour: Medium ruby red, not opaque.

Aroma: Ripe red berries (strawberry, raspberry, cherry), a light plummy background. Mediterranean herbs (thyme, rosemary) and peppery spice.

Palate: medium-bodied, with a juicy, silky texture. The Garnatxa adds sweeter berry notes, while the Cariñena brings zesty acidity and spice. The finish is moderately long, slightly herbal and juicily fruity.

Food pairing:

  • Ideal alongside tapas: cured ham, chorizo, patatas bravas
  • Grilled vegetables (aubergine, courgette)
  • Simple meat dishes: grilled chicken, pork chop with herbs, beef burger
  • Tomato-based pastas and pizzas
  • A lively red that also works with richer fish dishes (e.g. tuna steak)

Ageing potential:

  • Intended to be enjoyed young, best in 2024–2026. It can keep for 5-6 years but is not meant for long-term development.

Terroir al Límit is a Priorat winery that has changed the region's wine philosophy over the past two decades. Founded in 2001 by Dominik Huber and Eben Sadie, it grew from a wish to make elegant, transparent wines that reflect their terroir, in contrast to the traditionally powerful, oak-heavy wines of Priorat. When Eben Sadie returned to South Africa, Huber took over and expanded the winery with biodynamic vineyards. His winemaking is known for minimal intervention, using whole-cluster fermentation, natural yeasts and neutral vessels such as concrete tanks and large Stockinger foudres. Huber's range follows the Burgundian hierarchy: village and regional wines such as Terra de Cuques and Torroja, "Premier Cru" single-vineyard wines such as Dits del Terra and Arbossar, and "Grand Cru" wines such as Les Manyes and Les Tosses. He also created the Terroir Històric series, focused on Priorat's historical wine styles. Terroir al Límit has helped shape the new face of Priorat, highlighting elegance and a clear expression of terroir. Huber's work has inspired the "New Priorat" movement, which favours a lighter, more nuanced style.
