The wine's story:

Recueil Extrait is Girard-Bonnet’s experimental cuvée, designed to explore Champagne’s different grape varieties and terroirs beyond the house’s usual focus on Chardonnay.

While most of the house’s wines are based on Côte des Blancs Chardonnay, Recueil Extrait focuses on to Pinot Meunier, which is known in Champagne for its a fruitier and slightly softer style .

This project allows Paul Girard to experiment with different vinification methods and small lots that are not part of the core range. As a result, the Recueil Extrait wines are often produced in very limited quantities and each number denotes a new version or batch.

Winemaking:

The grapes come from Pinot Meunier vineyards in Champagne. Harvesting is done by hand to preserve fruit quality and optimal ripeness.

Pressing is gentle and fermentation takes place in oak barrels, which adds texture and depth to the wine. Like Girard-Bonnet’s other wines, Recueil Extrait also matures for a long time on the lees, which gives the Champagne complexity and a finer mousse before re-corking.

Technical details

Grape variety: Pinot Meunier
Origin: Champagne
Composition: NV
Vinification: oak barrels
Dosage: 0 g/l (Brut Nature)
Alcohol: 12.5%
Re-corking: 2026

Tasting notes:

On the nose come red apple, wild strawberry and ripe pear, complemented by light spicy and herbal nuances. Maturation on the lees gives the wine tones of brioche and roasted almond.

On the palate, the wine is soft and juicy, where the fruitiness typical of Pinot Meunier meets a fresh acid structure. The finish is long and slightly spicy, where notes of red berries and apple linger.

Food pairing:

Recueil Extrait pairs well with dishes featuring more texture and a slightly bolder flavour.

A good match, for example:

  • roast chicken or turkey

  • mushroom dishes

  • lightly smoked fish

  • softer cheeses

The fruity, slightly spicy character of Pinot Meunier also goes well with with lighter meat dishes, which would not be such natural partners for a classic Blanc de Blancs.

Ageing potential:

Recueil Extrait is enjoyable even when young thanks to its fruity, juicy style, but develops well in bottle 5–8 years, during which the aromas deepen and bring out ripe apples, nutty and brioche tones.

Champagne Girard-Bonnet is a grower Champagne house in the Grand Cru village of Le Mesnil-sur-Oger in the Côte des Blancs. The domaine is run by Paul Girard, from a family that has grown grapes in the area for several generations. The house has small vineyards in several renowned Côte des Blancs villages – Le Mesnil-sur-Oger, Oger and Avize (Grand Cru) and Vertus (Premier Cru). These villages sit on chalky slopes where thin limestone soil gives Chardonnay the region's typical precise acidity, chalky minerality and straight structure. Girard-Bonnet's Champagnes are based mainly on Chardonnay. In the vineyards the focus is on small parcels, low yields and the balance between ripeness and acidity. Several plots have been in the family for decades and give small but concentrated crops. In the cellar the approach is technically precise and rather restrained. Fermentation uses natural yeasts, in stainless steel or neutral oak depending on the cuvée. Whether malolactic fermentation is used depends on the vintage and the wine – the aim is to keep the tense acidity and clarity of Côte des Blancs Chardonnay. The wines age for a long time on the lees, adding texture and depth. The range is built on the expressions of villages and single vineyards – from the fresher, more approachable style of Vertus Premier Cru to the chalky precision of Le Mesnil-sur-Oger, the elegance of Avize and the slightly broader, riper tones of Oger. The result is Champagnes that emphasise origin, structure and minerality – a clear and detailed expression of Côte des Blancs Chardonnay.
