The wine's story:

L’émergente is the Poissinet house’s signature cuvée, symbolising „emergence“ – the result of a partnership between land and people that highlights the distinctive limestone and clay soils of Cuchery. This is a Champagne that aims not for sparkle or power, but for balance and inner energy.
The wine is crafted to express the elegance of Meunier from the Marne Valley, with a small proportion of Chardonnay adding structure and backbone.

Winemaking:

L’émergente is based predominantly on Meunier (around 80%), supported by a smaller proportion of Chardonnay from old vines. The grapes are harvested by hand and pressed gently to preserve the purity of the juice. Fermentation takes place with natural yeasts, partly in enamelled steel tanks and partly in small oak barrels, where malolactic fermentation also occurs. The wine then matures for at least 24–36 months on its lees, with a minimal dosage of around 3–4 g/l (Extra-Brut).

Tasting notes:

Bright golden in colour, with a fine, persistent mousse. The nose reveals ripe pears, yellow apple, fresh lemon zest and delicate hints of brioche and wild flowers. On the palate the wine is full yet light and flowing, its structure framed by lively, juicy acidity. Ripe citrus, peach and white pepper come through on the palate, and the finish is long, mineral and saline-dry, recalling the chalky soil the grapes come from.

Food pairing:

A perfect companion to fresh oysters and prawns, as well as grilled sea bass or cod with lemon and herbs. L’émergente also pairs with roast poultry, fine white cheeses or light Asian dishes dominated by lime, ginger or coriander.

Ageing potential:

Shows at its best within 2–3 years after degorgement, but thanks to its balance and energetic acidity it will develop elegantly for at least 8 years. With age it takes on a riper texture and nuances of brioche and roasted nuts.
