The wine's story:

BD’3C (Trois Cépages – „three grapes“) is the most versatile and balanced cuvée from the house of Bourgeois-Diaz. It reflects the diversity of the clay and limestone soils of the village of Crouttes-sur-Marne and the results of biodynamic work, which has taken the vitality of the land and the expression of the grapes to a new level. The wine brings together the three main Champagne varieties, all grown on the estate's 40-year-old vines.

BD’3C expresses the house philosophy: a wine made with as little intervention as possible, revealing the true character of the region – energetic, precise and alive, with no added sugar and no filtration.

Winemaking:

Blend: approximately 40 % Pinot Noir, 35 % Pinot Meunier and 25 % Chardonnay.
The grapes are hand-harvested from biodynamically farmed plots on the slopes of Crouttes-sur-Marne. Pressing takes place in a traditional Coquard press. Fermentation begins with wild yeasts, partly in stainless steel tanks and partly in small oak barrels.
Malolactic fermentation takes place naturally; the wines are neither filtered nor fined.
The wine matures in bottle on its lees for 24–36 months before disgorgement.
Dosage: 0 g/l – Brut Nature.
Sulphite levels are minimal.

Tasting notes:

On the nose, fresh pear, ripe green apple, white flowers and a delicate hint of brioche. The palate is lively and precise, with a lightly citrusy attack followed by nuances of peach and almond. The texture is silky yet taut; the finish dry, saline-mineral and long. Clear, precise and energetic in style – a true Vallée de la Marne signature.

Food pairing:

Ideal with seafood and fresh fish (oysters, prawns, sea bass), as well as lightly spiced Asian cuisine. Excellent as an aperitif or with dishes made with goat’s cheese and lemon.

Ageing potential:

Best enjoyed within 2–5 years of disgorgement, but if well stored it can develop for a further 7 years, gaining riper brioche and nutty notes.

Champagne Bourgeois-Diaz is a small family Champagne house in Crouttes-sur-Marne in the Vallée de la Marne. The vineyards cover about 7 hectares: around 3.5 ha of Meunier, 2 ha of Pinot Noir and 1 ha of Chardonnay. The vines grow mostly on clay and limestone soils and average 40 years of age. The estate is run by Jérôme Bourgeois-Diaz, who has taken the whole production to organic and biodynamic farming (Demeter certified). No herbicides or synthetic fertilisers are used; the focus is on living soils and biodiversity. A traditional Coquard press is used in the cellar. Each grape variety and site is vinified separately with natural yeasts only. Most wines go through malolactic fermentation and age for a long time on the lees for texture and balance. The Champagnes are mostly bottled as Brut Nature or Extra Brut to emphasise the purity of the terroir and an energetic style. Bourgeois-Diaz wines are known for their precise structure, distinctive minerality and expressive Meunier, reflecting the strength of the clay-limestone soils of the Marne Valley's northern terraces.
