The wine's story:
BD’RS (“Rosé de Saignée”) is Bourgeois-Diaz’s truly artisanal rosé – a wine born not from blending in colour (assemblage) but from a short skin-contact method, or saignée. This means that part of the red Champagne wine juice is left to ferment separately after a brief maceration, achieving deep colour and fruity intensity without technical manipulation.
The cuvée combines the power and energy of Pinot Noir and Pinot Meunier, expressing the juicy ripeness of the clay-limestone soils of Crouttes-sur-Marne. BD’RS is made for those who prefer a rosé with serious character and structure – it is more a food wine than an aperitif.
Winemaking:
Blend: approximately 60% Pinot Noir and 40% Pinot Meunier.
The grapes come from old, biodynamically farmed vineyards in Crouttes-sur-Marne, where the average vine age is 40 years.
The grapes macerate for around 24 hours, after which part of the juice is drawn off (saignée) to achieve intense colour and texture. Fermentation takes place with wild yeasts in small oak barrels, and malolactic fermentation occurs naturally.
The wine matures in bottle on the lees for about 30 months, before disgorgement.
Dosage: 0 g/l – Brut Nature.
Minimal addition of sulphites.
Tasting notes:
The nose is intense and expressive: wild strawberry, redcurrant, cherry stone and a light woodland herbal note. On the palate the wine is full-bodied, with a deep fruity core and fine acidic tension. The texture is closer to a light red wine than a classic rosé, while retaining the freshness of Champagne and the elegance of its bubbles.
The finish is dry, saline and mineral, with a light peppery hint – showing the wine’s natural power and the precision of biodynamic work.
Food pairing:
BD’RS is an ideal Champagne for the dinner table – it stands up to strong flavours and textures. It pairs superbly tuna tartare, grilled salmon, duck breast or with a veal chop.
Also a very good choice lightly spiced Asian dishes, roasted beetroot, wild mushroom risotto and duck with raspberry sauce .
As for cheeses, young washed-rind goat’s and sheep’s cheeses work well, as do soft truffle cheeses.
Ageing potential:
Best enjoyed within 2–4 years of disgorgement, but if well stored it can develop for 6–7 years, gaining a deeper flavour palette and notes of dried berries and spice.
