The wine's story:
BD’N (“Blanc de Noirs”) is Bourgeois-Diaz’s interpretation of the black grapes of the Vallée de la Marne. This cuvée combines the power of Pinot Noir with the juicy, fruit-driven character of Pinot Meunier, bringing out the depth of the region’s limestone-clay soils. The wine was created to show that a white Champagne made from black grapes can be just as pure and multi-layered as a classic Blanc de Blancs – but with an entirely different, berry-fruited energy.
This cuvée is one of the house’s foundation wines, expressing the interplay of natural viticulture, artisanal pressing and wild yeasts in its most honest form.
Winemaking:
Composition: approximately 70% Pinot Meunier and 30% Pinot Noir.
The grapes come from the slopes of Crouttes-sur-Marne and Leuvrigny, where the soil consists of layers of clay and limestone, giving the wine both structure and mineral tension.
Fermentation takes place with wild yeasts, without added sugar, partly in small used oak barrels and partly in stainless steel tanks.
Malolactic fermentation takes place naturally.
After bottling, the wine ages on its lees 30–40 months, then disgorged without dosage (0 g/l – Brut Nature).
Minimal use of sulphites.
Tasting notes:
The nose is deep and multi-layered: ripe red apples, wild strawberry, a light nuance of cherry and raspberry, joined by notes of dried herbs, chalk and roasted hazelnut. On the palate, juicy red berries combine with citrus freshness and saline minerality. The texture is dense yet elegant; the acidity straight and energetic. The finish is long, dry and mineral, recalling the limestone depth of Crou ttes-sur-Marne.
Powerful yet balanced in style – a wine that shows Bourgeois-Diaz’s uncompromising expression of terroir.
Food pairing:
BD’N is a gastronomic Champagne that works at the table as a serious food wine. Superb with roast quail, duck breast or veal chop. Also very good with smoky notes and umami-rich dishes – for example truffle risotto, mushroom tortellini or a dish with roasted celeriac.
For seafood lovers it pairs well with baked sea bass, lobster or prawns, where the balance of butter and lemon accentuates the wine’s mineral tension. Older hard cheeses (Comté, Mimolette) also create an elegant interplay.
Ageing potential:
Optimal drinking window 2024–2030. The structure and low dosage allow the wine to develop for at least 7–9 years, during which the aromatic complex deepens – brioche, nuts, dried fruit and dark honey emerge alongside a fine oxidative note, while freshness and minerality are retained.
