The wine's story:

BD’B is Bourgeois-Diaz’s pure and precise Blanc de Blancs expression – a Champagne that focuses on the clarity, minerality and terroir of Chardonnay. The grapes come from the clay and limestone soils of Crouttes-sur-Marne, where biodynamic farming gives the fruit a natural balance and depth.
This cuvée does not try to impress with power, but expresses the house philosophy: precision, purity and natural tension. BD’B is a Champagne for those who value energy, texture and a clear sense of origin.

Winemaking:

Composition: 100% Chardonnay.
The grapes come from hand-tended, biodynamically farmed vineyards. Pressing takes place in a traditional with a Coquard press, ensuring a fine and precise juice.
Fermentation takes place with wild yeasts in small oak vessels, where the wine rests on its lees for several months, gaining texture and depth.
Malolactic fermentation takes place naturally.
Second fermentation in bottle and aged on the lees for at least 24–36 months before re-corking.
Dosage: 0 g/l – Brut Nature.
The addition of sulphites is minimal.

Tasting notes:

The nose reveals white blossom, lemon zest, green apple and chalky minerality, joined by delicate notes of almond and fresh brioche.
On the palate the wine is clear, taut and precise – high yet ripe acidity is balanced by a creamy texture.
The finish is long, dry and mineral, leaving a clean, refreshing aftertaste.
BD’B is a Champagne that unfolds calmly and in layers, suited both to contemplative sipping and to enjoying with food.

Food pairing:

The ideal companion with oysters, scallops, prawns, white fish and raw seafood.
Also pairs superbly goat's cheese, fresh salads and minimalist cuisine.
A superb aperitif, but with enough structure for the table too.

Ageing potential:

Best drinking window 2025–2030+.
The structure and acidity allow the wine to develop in bottle for several years, bringing out more nutty and brioche-like nuances while retaining its freshness and mineral backbone.

Champagne Bourgeois-Diaz is a small family Champagne house in Crouttes-sur-Marne in the Vallée de la Marne. The vineyards cover about 7 hectares: around 3.5 ha of Meunier, 2 ha of Pinot Noir and 1 ha of Chardonnay. The vines grow mostly on clay and limestone soils and average 40 years of age. The estate is run by Jérôme Bourgeois-Diaz, who has taken the whole production to organic and biodynamic farming (Demeter certified). No herbicides or synthetic fertilisers are used; the focus is on living soils and biodiversity. A traditional Coquard press is used in the cellar. Each grape variety and site is vinified separately with natural yeasts only. Most wines go through malolactic fermentation and age for a long time on the lees for texture and balance. The Champagnes are mostly bottled as Brut Nature or Extra Brut to emphasise the purity of the terroir and an energetic style. Bourgeois-Diaz wines are known for their precise structure, distinctive minerality and expressive Meunier, reflecting the strength of the clay-limestone soils of the Marne Valley's northern terraces.
