Agostado Palo Cortado

Agostado is Ramiro Ibáñez's distinctive, unfortified interpretation of the world of Palo Cortado – a wine that moves along the border between white wine and old Jerez styles.

The wine's story:

Agostado is one of Ramiro's most personal and exploratory projects. The aim of this wine is not to make a classic Palo Cortado in today's sense, but to return to an earlier Jerez logic, where the wine's final character depended not only on cellar classification but also on the grape, ripeness, the development of the flor and the effect of time. Agostado combines Palomino with almost forgotten local varieties to bring more natural tension and irregularity into the wine. The result is not a category wine, but a highly individual interpretation of how old Jerez may have tasted before everything became systematised and standardised.

Winemaking:

A blend of Palomino and a smaller proportion of older local varieties, which make the development of the flor more complex and naturally steer the wine partly in a more oxidative direction. The grapes may undergo a short asoleo before fermentation, after which spontaneous fermentation takes place in barrel. The wine matures statically for more than two years and remains unfortified. Stylistically, it is a wine in which the biological and oxidative dimensions coexist: the flor is perceptible but not entirely dominant, and oxidation adds depth without making the wine heavy.

Tasting notes:

On the nose, dried apple, chamomile, nuts, orange peel, a slightly resinous herbal quality and a subtle oxidative tone. On the palate, dry, broad, waxy and textured, yet not massive. The finish brings out almond, tea, dried citrus and a quiet saline line.

Food pairing:

Pairs with consommé, mushroom dishes, mature poultry, aged cheeses, nutty sauces and dishes with plenty of umami. Also very good as a wine to drink on its own, contemplatively.

Ageing potential:

Best within 8–12 years. If well stored, it may become even more layered, nuttier and calmer.

Ramiro Ibáñez is one of the most important figures in today's Jerez, helping to bring the region's focus back to its vineyards, pagos and albariza soils. A winemaker from Sanlúcar de Barrameda, he combines historical knowledge with an inquisitive approach to show that Palomino can express its origin as clearly as the region's famous fortified wines. His wines come from old vineyards, with minimal intervention and often in used manzanilla casks, where flor is not just a technical detail but part of how the terroir speaks. The result is wines that emphasise salinity, texture, layers and a sense of place rather than power.
