The wine's story:
Efflorescence 2018 embodies Côte des Bar Pinot Noir in its purest and clearest form. The cuvée comes from vines around 40 years old growing on Kimmeridgian limestone — a soil that shapes the character of this wine as much as the grapes themselves.
2018 was an exceptionally well-balanced year in the Aube: cooler nights and moderate ripeness gave the grapes fresh acidity, sharp aromatic purity and a very clear structure.
Efflorescence is a wine that does not try to be powerful — its strength lies in precision, purity and a stony backbone. The 2018 vintage brings exceptional transparency: this is a Pinot Noir that sings like a fine white wine, with a dark-berry heart and the bright rhythm of limestone.
Winemaking:
• 100% Pinot Noir
• Vine age: ~40 years
• Soil: Kimmeridgian limestone
• Aspect: east-facing slope
• Viticulture: biodynamic (Demeter)
Fermentation:
– with natural yeasts
– in oak barrels (exactly as the technical sheet states)
Maturation:
– 12 months in oak barrels (neutral oak influence, emphasis on micro-oxygenation rather than flavour)
– 36 months in bottle on the lees
Other technical details:
– racking: yes
– no fining or filtration
– SO₂ is used (a small technical amount, not stylistic)
– dosage: Extra Brut
This is the “quietest yet deepest” cuvée in Dominique Moreau’s portfolio — a wine that needs time and space to open up, not technical tricks.
Tasting notes:
The nose is airy, sharp and very pure: redcurrant, cherry, wild strawberry and delicate rose petal. In the background there is a hint of dried herbs and white pepper, and a slowly unfolding smoky mineral note that emerges from long ageing on the lees.
On the palate the wine is finely drawn and elegant. The gentle tartness of red berries, the freshness of lemon peel and a saline limestone core create an exceptionally precise and vertical profile.
The finish is long, dry and intensely concentrated — the mineral line quite literally keeps “resonating” in the glass.
Efflorescence 2018 is a Champagne that will not be rushed — a wine that grows more aromatic and complex in the glass with every minute.
Food pairing:
• oysters, scallops and any seafood where salinity is key
• sushi, sashimi, ceviche
• grilled sea bass or trout with lemon
• asparagus and artichoke dishes
• fresh cheeses: goat’s cheese, ricotta, burrata
• vegetable risottos, especially with buckwheat or fresh herbs
• also superb as a meditative Champagne “to enjoy on its own”
Ageing potential:
2024–2032+
With maturity, notes of brioche, roasted almond, truffle and dried citrus emerge, yet the vintage’s characteristic stony backbone and elegant acid rhythm remain.
