The wine's story:

Efflorescence is one of Marie-Courtin’s most intensely characterful cuvées — a wine in which the berry fruit of ripe Pinot Noir, the gentle influence of oak and the energetic precision of biodynamic farming come together in a complete and powerful expression.
The grapes come from vines around 40 years old, whose roots are deeply anchored in layers of Kimmeridgian limestone. The signature of this soil — a saline, stony and metallic nuance — gives Efflorescence its structure and clear rhythm.

2019 was a ripe, balanced year in the Aube, giving the Pinot Noir exceptional aromatic clarity and natural ripeness. Efflorescence 2019 is a cuvée that brings out this energy without making the wine heavy: it is at once deep and elegant, powerful and precise.

Winemaking:

• 100% Pinot Noir
• Vine age: ~40 years
• Soil: Kimmeridgian limestone
• Aspect: east-facing slope (morning sun, fresh acidity)
• Viticulture: biodynamic (Demeter)

Vinification:
– fermentation in oak barrels (not in steel, not in enamel)
– maturation in oak barrels for 12 months
– bottle ageing on the lees 36 months
– racking: yes
– fining and filtration: no
– SO₂: is used (unlike Concordance)
– dosage: Extra Brut

The oak barrels are used and neutral — the wine does not become “oaky”, but gains a gentle micro-oxygenation that opens up the structure of the Pinot Noir and makes the texture silkier.

Tasting notes:

On the nose there is ripe cherry, wild strawberry, raspberry, black plum and drier herbs.
Thanks to long ageing in oak, a delicate smokiness and refined spice emerge — hints of black pepper, hazelnut and dried orange peel.
On the palate the wine is rich and multi-layered: red berries, a light citrus freshness and deep mineral salinity. The texture is silky and full, yet clearly defined.
The finish is long, dry, aromatic and very elegant.

Food pairing:

• duck breast or poultry with rosemary and brown butter
• pasta with truffle cream or a wild mushroom sauce
• grilled or lightly smoked fish
• veal and vegetables (parsnip, celeriac, pumpkin)
• harder cheeses: Comté, Gruyère, Mimolette
• an excellent match for fried calamari, mushroom dishes and autumnal fare

This is a Champagne made to be the centrepiece of the table — gastronomic and powerful, yet always elegant.

Ageing potential:

2024–2034.
With age, nuances of brioche, roasted almond, smoky minerality and dried herbs emerge.

Champagne Marie-Courtin is one of the most distinctive small producers of the Côte des Bar – a 2.5-hectare biodynamic domaine run by the charismatic vigneronne Dominique Moreau. It is named after Dominique's grandmother, symbolising feminine strength, closeness to the land and an intuitive approach to nature – the principles at the heart of the Marie-Courtin style. The vines in the village of Polisot grow on Kimmeridgian limestone, the same kind of soil that gives the great wines of Chablis their mineral backbone. Most of the vineyard consists of older massal-selection vines that give small but exceptionally concentrated crops. Dominique works fully to organic and biodynamic principles (Demeter), using only the yeasts from her own vineyard and avoiding added sugar or any stylistic "cosmetics". Marie-Courtin's philosophy is "one plot, one grape, one vintage" – each cuvée is a single, unrepeatable reflection of a specific part of the vineyard and a specific year. The result is exceptionally pure, precise and tense Champagnes with bright acidity, salty minerality and deep energy. Pinot Noir shows itself here as both powerful and airy, sometimes almost flinty, with notes of chalk and wet stone. Dominique's wines (Résonance, Efflorescence, Concordance, Éloquence and others) have received high scores from international critics for their focus, unusual purity and the courage to let the terroir speak. These Champagnes are not meant only as an aperitif – they are gastronomic wines with character, best served in a white wine glass, and they can keep developing after opening. Today Marie-Courtin is one of the most influential biodynamic producers of the Côte des Bar, whose small cuvées are highly valued by sommeliers for their uncompromising honesty and terroir-driven precision.
