The wine's story:

BD’3CC („Trois Cépages Collection“) is Bourgeois-Diaz’s prestige cuvée made from the three classic grape varieties, released only in the finest vintages. 2018 was an exceptionally warm and stable year in the Vallée de la Marne, allowing the grapes to reach unusually complete ripeness while retaining sufficient acidity.
The wine is a deeper, more concentrated interpretation of the house style – expressing the character of the clay-limestone soils of Crou ttes-sur-Marne and the energy of biodynamic farming. BD’3CC is designed as a Champagne with ageing potential, combining power with precise elegance.

Winemaking:

Blend: approximately 40 % Pinot Noir, 35 % Pinot Meunier and 25 % Chardonnay.
The grapes come from old vines over 40 years of age. All work is done by hand and the grapes are pressed in a traditional Coquard press. Fermentation takes place with natural yeasts in small oak barrels, where the wine remains on its lees for several months.
Malolactic fermentation takes place naturally.
The wine was bottled in spring 2019 and aged in bottle on the lees for over 60 months (5 years) before disgorgement.
Dosage: 0 g/l – Brut Nature.
The addition of sulphites is minimal.

Tasting notes:

The nose shows roasted hazelnut, ripe apple, white peach and a delicate smoky note. On the palate the wine unfolds in layers: first ripe yellow fruit and citrus, then nuances of brioche and almond, framed by a strong mineral line. The texture is creamy yet taut; the acidity precise and elegant. The finish is long, dry and saline-mineral – a hallmark of the house and of the Vallée de la Marne terroir.

Food pairing:

A superb companion to baked white fish, lobster, or poultry with truffle and butter sauces. Also pairs well with aged Comté or Gruyère. A top-class gastronomic Champagne.

Ageing potential:

Best drinking window 2024–2032. The structure of the 2018 vintage and long ageing on the lees allow the wine to develop for at least another ten years, taking on notes of brioche, dried fruit and nuts as it matures.

Champagne Bourgeois-Diaz is a small family Champagne house in Crouttes-sur-Marne in the Vallée de la Marne. The vineyards cover about 7 hectares: around 3.5 ha of Meunier, 2 ha of Pinot Noir and 1 ha of Chardonnay. The vines grow mostly on clay and limestone soils and average 40 years of age. The estate is run by Jérôme Bourgeois-Diaz, who has taken the whole production to organic and biodynamic farming (Demeter certified). No herbicides or synthetic fertilisers are used; the focus is on living soils and biodiversity. A traditional Coquard press is used in the cellar. Each grape variety and site is vinified separately with natural yeasts only. Most wines go through malolactic fermentation and age for a long time on the lees for texture and balance. The Champagnes are mostly bottled as Brut Nature or Extra Brut to emphasise the purity of the terroir and an energetic style. Bourgeois-Diaz wines are known for their precise structure, distinctive minerality and expressive Meunier, reflecting the strength of the clay-limestone soils of the Marne Valley's northern terraces.
